IUP Department of Food and Nutrition professor Pao Ying Hsiao and Bowling Green State University professor Mary-Jon Ludy presented “Move Over
Millennials: What Generation Z expects from Dietetics Education” at the 2019
Food and Nutrition Conference and Expo in Philadelphia.
In this talk on October 27, 2019, Hsiao and Ludy presented background on the motivations and
learning preferences of Generation Z and provided information about their use
of digital learning tools to engage current students when teaching about

infographics, Instagram, and Flipgrid to engage current students in learning.
Additionally, 21 students (nine undergraduates and twelve dietetic
interns) also attended the Food and Nutrition Conference and Expo 2019 along with Hsiao. Students had the opportunity
to attend educational sessions, network with nutrition professionals, attend
the dietetic internship fair, and sample hundreds of food samples on the expo
