Dietetic Interns

The IUP dietetic interns recently sponsored the community and kids’ tents at the Indiana Farmer’s Market’s Health and Wellness Day on Saturday, September 17, from 9:00 a.m. to 12:00 p.m. in the parking lot on Church and 8th streets in downtown Indiana. This event featured free samples and activities for all ages.

“Coming to the farmer's market is a great experience to support local growers and our local economy. It also allows buyers to interact with the producers,” explained Jodie Seybold, MS, RDN, LDN, faculty member in the Department of Food and Nutrition at IUP.

The event included an interactive community tent where attendees could sample probiotic smoothies and learn about fermented foods. “Fermented foods are an up-and-coming health trend in the nutrition world, and we are excited to educate the public on the many benefits of consuming these products,” said Jason Nepa, IUP dietetic intern.

Additionally, interns hosted a kids’ tent where children could learn about food science. “Our goal is to show kids that they can apply some of the concepts they learn in their science class to food, while creating a delicious, healthy treat,” said Seybold.

The dietetic interns are graduate students in the Department of Food and Nutrition who are learning through practice to become registered dietitians. One component of their internship is to provide nutrition counseling and education to both the IUP and Indiana communities.

“We want our communities to be healthier. Donating our time and knowledge surrounding food and nutrition is something that nutrition professionals are passionate about,” said Seybold.
