Nemacolin Woodlands Resort

Farmington, Pennsylvania

Sean Echman was promoted to executive sous chef of Fine Dining at Nemacolin Woodlands Resort in 2010 in recognition of his culinary creativity. In this role, he is able to use his culinary expertise to enhance the dining experience for guests at the resort’s fine dining restaurants, Lautrec, Aqueous, and Autumn.

Chef Sean Eckman graduated with honors from Indiana University of Pennsylvania Academy of Culinary Arts in 2000, after completing his externship in West Palm Beach, Florida at the Breakers (a Mobil Five-Star, AAA Five-Diamond Hotel at the time).

As an extern, he worked hard and was rewarded by being the only extern to be hired at L’Escalier, a fine dining restaurant on the resort’s property. Following his successful externship performance, the Breakers offered Echman a permanent position at the property, where he stayed for eight years, working his way up to the position of banquet chef.

In April 2008, Chef Eckman began his tenure at Nemacolin Woodlands Resort by accepting a position as chef de cuisine for Aqueous, one of the property’s fine dining restaurants.
