The Academy of Culinary Arts
In addition to attending classes in the Learning Center, culinary majors take kitchen lab classes in a 13,000-square-foot Kitchen Lab facility dedicated exclusively to culinary education. The facility includes the following instructional kitchens and classrooms:
Bake Shop
This fully equipped bakery is the laboratory where students receive comprehensive baking instruction from the fundamentals to advanced techniques. The mouthwatering aroma of fresh baked breads, rich tortes, flaky croissants, and an array of other tempting pastries fills the air.
Hot Foods Kitchen
Here students learn skillful knife cuts and the proper technique to prepare savory stocks and soups such as perfectly clear consommés, creamy seafood bisques, and chilled strawberry soup.
Garde-Manger Kitchen
Students work in this kitchen to create magnificent ice sculptures, fruit and vegetable carvings, decorative garnishes, specialty salads, and lavish cold buffets.
A La Carte Kitchen
In this kitchen, students discover international cuisine and classical and contemporary American dishes such as lobster newburg, broiled swordfish bathed in a ginger lime butter, and tender medallions of venison graced with blackberry sauce.
Fabrication Kitchen/Receiving Area
This area is used to teach receiving and quality controls. Students will also be introduced to butchery with demonstrations on how to fabricate primal cuts of a beef into filets, ribs, and steaks.
Demonstration Kitchen/Bakeshop Workroom
Students work on large-scale projects here, including advanced sugar work and wedding cakes.
Lecture Rooms
In lecture classes, students discover the theory and application of culinary science and other topics such as fine wine appreciation and the creative uses of fresh herbs.
Summer Dining Room
Home to our student-run resaturant. Culinary majors taking the American Tableservice course are introduced to front-of-the-house operations in an elegant American a la carte service dining room.
Coming in 2009, The Fairman Centre
IUP will be introducing another state-of-the-art facility featuring additional on-campus living, a media demonstration theatre, multimedia classrooms, and two culinary teaching kitchens especially designed for Baking and Pastry and Advanced Garde Manger!
