If you have successfully completed the Culinary Arts curriculum at IUP or have graduated from an ACF-accredited Baking and Pastry Arts program elsewhere, you may be eligible to apply to the Baking and Pastry Arts major.

For an industry in demand for baking professionals with advanced technical skills, you’ll be sure to leave our program prepared to step out into a professional career. Our second-year Baking and Pastry Arts program continues the comprehensive baking instruction that students receive in the Culinary Arts program or in another comprehensive first-year baking program. The advanced-level program provides some of the most premier pastry training available in the country to new culinarians. Fifteen-student class sizes allow a personal approach to instruction by veteran ACF-certified executive pastry chefs and culinary educators.

Take your current baking skills to a whole new level

Our “one of a kind” curriculum, according to the American Culinary Federation, has received the highest level of accreditation. As a part of our curriculum, you will study in the Bake Shop laboratory for two semesters, fall and spring. Each semester consists of five three-week courses, for a total of 10 courses.

The subjects you will study include an expanded curriculum in:

  • quick breads, laminated dough
  • basic and artisanal breads
  • pies, tarts, pastries
  • cookies, petit four, cakes
  • advanced cake decorating and wedding cakes
  • custards and mousse
  • plated desserts
  • chocolate and candies
  • ice cream and sorbet
  • pastillage, chocolate, and sugar showpieces

Gain real-world experience at a paid baking externship

Your final semester will be a four-month paid baking externship. You will apply and further develop the skills that you have learned in the classroom as you work with experienced industry chefs in the field. Your externship not only completes your education; it may well develop into a permanent position or a valuable reference for future employment.
